Hot Italian Sandwiches

I whipped up this recipe because it looked quick and easy.  Ashlan had a soccer game soon after school let out, so I had a small window to get dinner made.  This was what I picked out to make.
And you now why this quick, easy recipe made the blog.....because my family went on and on saying, "Man, these are good!".... "These are soooo good!"
And they are.
Make them.

Ingredients
  • 6 Hoagie Rolls
  • 4 ounces Sliced Salami
  • 4 ounces Large, Thinly Sliced Pepperoni
  • 9 ounces Sliced Ham
  • Thin Sliced Mozzarella 24 slices
  • Giardiniera Mix optional (I omitted this)
  • 1/2 stick Butter - softened
  • 1 teaspoon Dry Italian Seasoning
Instructions
  1. Preheat oven to 350°
  2. Mix butter and Italian season. Evenly spread butter on inside of hoagie rolls.
  3. Layer 2 slices of mozzarella, 2 slices salami, 2 slices pepperoni and 2 slices ham. Top with giardiniera mix and 2 more slices of mozzarella.
  4. Once sandwiches are assembled, place into a large baking dish. Make sure they are tightly pressed together sideways with the open side facing up.
  5. Bake for 10 minutes for a hot melty sandwich. (bake longer if you prefer a toasted sandwich)

Grilled Cheese Perfection

Gosh, do I love a grilled cheese!
I probably make them once a year...not enough in my opinion.

But I saw this picture on Pinterest and started salivating....
I knew this week I needed to make this sandwich..
It's your basic grilled cheese with tomato and bacon!

How to Make the Perfect Grilled Cheese, Ingredients:

Really good bread, I prefer a sturdy sour dough with thicker than average slices
Crispy bacon, it absolutely needs to be crispy otherwise you run the risk of yanking the whole rubbery slice out with your first bite.  And that's basically criminal.
Thin sliced tomatoes, if they're too thick you'll end up with a gloopy tomato seedy mess.
American cheese, classic. Please don't deviate.
Butter, the real stuff.

How to Make the Perfect Grilled Cheese, Directions:

Slather the outside of each slice of bread with butter.  Be generous.
Cover the unbuttered side of each slice with cheese.  Yes, both slices get cheese.
On one slice place bacon, and on the other slice place tomato.  Carefully put slices together, buttered sides facing out.
Cook on a medium heat skillet, turning frequently for even browning, until toasted to your liking.
Enjoy with a piping hot cup of soup!

I served this sandwich along with a bowl of chicken soup (recipe in post below)
Such a good meal on a chilly, rainy evening!

Mini Hot Brown Sliders

A warm turkey, bacon, and tomato slider with the most delicious sauce on top...
That's what this recipe is.

(photo and recipe courtesy of TasteAndTellBlog)

What you need:
5 tablespoons mayonnaise
12 dinner or potato rolls, split
9 oz deli sliced turkey
3 Roma tomatoes, sliced
12 slices cooked bacon, cut in half
4 tablespoons butter
¼ cup all-purpose flour
2½ cups milk
½ cup freshly grated parmesan cheese
¼ teaspoon paprika
¼ cup grated sharp cheddar cheese

Instructions
Preheat the broiler.
Spread the mayonnaise on the cut sides of the rolls.
Place the rolls, cut side up, on a baking sheet lined with parchment paper.
Broil just until golden, 1-2 minutes.
Reduce the oven to 200ºF.
Divide the turkey among the roll bottoms.
Top each with a slice of tomato and 2 half-slices of bacon.
Place the baking sheet back into the oven to keep warm while preparing the sauce.
Melt the butter in a small saucepan over medium heat.
Whisk in the flour and cook for a minute or two, then whisk in the milk slowly.
Add the parmesan and paprika.
Stir until the sauce thickens, 4-5 minutes.
Remove the saucepan from the heat and add the cheddar.
Stir until the cheese has melted completely.
Season the sauce with salt and pepper to taste.
Drizzle the cheese sauce over the sandwich bottoms (about 1 tablespoon each) and then add the roll top.
Serve warm.

We loved this meal!
All four of us ate two sliders each, along with a side salad and some chips.
And the four sliders that were leftover, my girls told me to store in the fridge overnight so they could take them for lunch the next day.  Score!

Ham and Cheese Biscuit Sliders

This recipe caught my eye because it was a fun twist on the typical Ham and Cheese.
And double thumbs up to an easy-made recipe!

Ingredients

1 (16 oz) can of biscuits (I used Grands, flaky)
1/2 pound of deli sliced ham
1/2 pound thinly sliced Swiss cheese
Honey to drizzle

Preheat oven to 350 degrees.

Bake your biscuits per packaged directions.

Remove biscuits from oven and allow to cool a minute or two.  Keep your oven on and your baking sheet out.
Slice each biscuit in half and lay the two pieces out.
Top one half of each biscuit with a few pieces of ham and a few pieces of cheese.
Add the top back on the biscuit and place all 8 of your sandwiches back on a foil lined baking sheet.Drizzle a tablespoon or so of honey down over each sandwich.
Place your baking sheet full of sandwiches back in the hot oven and bake another 5 minutes.
Remove from oven and serve immediately.

These were delicious.  I served them with a salad on the side.

When I asked Brent, "What do you think of these?  Blog worthy?"
(I always get his opinion on whether I should share a recipe or not....you'd be surprised how many I don't share!)
His response, "Yes, share it.  It's really good.  But warn people that your hands will get sticky eating these.  I didn't like that part."

So friends, I didn't notice too much sticky-ness, but he did.  If you are worried about this, then drizzle your honey inside the center of the biscuit on top of the ham and cheese, instead of on top of the biscuit.
Problem solved!
Either way, use the honey! It makes this dish!

Waffle Monte Cristo Sandwich

One of my favorite sandwiches is a Monte Cristo.
How can you beat a sandwich topped with powdered sugar and dipped in strawberry jam!

I was excited when I came across this easy recipe for the sandwich.
But it had a twist....
It used waffles!

So pull out your panini maker (or skillet if you prefer) and make this!
I gave it two thumbs up!

Shopping List
2 frozen waffles (keep them frozen if you're using a panini press)
Good quality ham (I used Boar's Head)
Good quality Swiss cheese (I used Boar's Head)
A sprinkle of powdered sugar
Strawberry Jam and/or Syrup for dipping

Preheat your panini press or large skillet.

Using the frozen waffles as your sandwich bread, build your sandwich with ham and Swiss.  Place your sandwich under your hot panini press on in your hot skillet (if using your skillet, you will need to first microwave your waffles and then press down on the sandwich with a spatula like you are making a grilled cheese and flip it once you think it's browned on one side...about 4 minutes per side).

After you remove your sandwich, sprinkle it with a little powdered sugar and serve with a side of jam or syrup.

Meatball Subs

I can't believe, as much as I make these for dinner, that I've never shared them with you.
It's a Meatball Sub.  We love meatballs and we love sandwiches/sliders....so this makes a great combo for our family.  I probably make this dinner once every 6 weeks.

Shopping List
1 pound of bulk Italian sausage (I used 1/2 a pound of ground beef and 1/2 a pound of sausage...so you could do that too...just don't use all ground beef because you won't get the same results)
2 cups Mozzarella cheese, shredded
1 jar (24 oz) spaghetti sauce
1 jar (8 oz) store bought pesto sauce
Hoagie or whatever sandwich bread you want to use

Preheat oven to 400 degrees.

In a medium sized bowl, combine your ground meats together (if you're using more than one).  Roll the sausage mixture into a golf ball sized ball.  Take about a tablespoon or so of cheese and stuff it inside, smoothing the meat back over the top to seal it in.  Place each meatball on a foil lined baking sheet lightly sprayed with Pam.  Repeat until all of your meatballs are complete.

Bake meatballs about 16-18 minutes.

Meanwhile, combine your spaghetti sauce and pesto in a large saucepan over medium heat.  Once the sauce starts to bubble, lower the heat to low, cover and stir occasionally.  Once your meatballs are done, add them to your spaghetti-pesto sauce for a couple of minutes.

Take each hoagie and top it with 2-3 meatballs and a little extra sauce.  And your subs are done.
*The pesto sauce makes the difference in this sub.  You won't be disappointed!*

Grilled Pizza Sandwiches

Grilled Pizza Sandwiches

Oh, Pinterest.  You won me over with this recipe!
It was SO QUICK to make,  full of flavor,  and the family ate their entire sandwich!

For a family of four:
8 slices of bread (the thicker the better- I used Sourdough)
8 slices of part skim mozzarella cheese
4 tsp. of Parmesan Cheese  (all I had on hand was shredded, so that's what I used)
4 dashes of garlic salt
24 slices of pepperoni (you can’t go wrong with more here…)
butter
pizza sauce
First, butter one side of each piece of bread, while the griddle or stove is heating up.  (I was torn between using the panini maker or the stovetop.  In the end, I picked stovetop)
Throw down one slice of bread butter side down on griddle or stovetop pan, then immediately begin building the sandwich up on top of it.
First layer it with a slice of Mozarella.
Top that with 6-9 slices of pepperoni

Next sprinkle a teaspoon of Parmesan and then a  dash of garlic salt.
Top all that with another piece of mozzarella cheese.
Top the whole thing off  with the final piece of bread butter side UP and by this time – it’s usually ready to flip.

Flip the sandwich over and continue cooking until golden brown. Serve with a side of pizza sauce (or spaghetti sauce) for dipping! Yum!

I made this dinner last night, which was Thursday night.  It's generally our busiest day of the week.
Between Kate having a Track Meet at 4:15, then Ashlan having soccer from 6-7, then getting Kate to band at 7:45 - I don't ever have enough time to whip up something worth sharing.
But I attempted this recipe last night in the midst of Thursday evening chaos, and it worked out great!!
Pinterest - I can't wait to make these again!

Hawaiian Baked Ham and Swiss Sandwiches

I'm going to start a new blog series called Pinterest Told Me To Cook It
I cook so many recipes that come off Pinterest, that I think it would be fun to let you know my opinion of each recipe after I cook it.  Every recipe I post on this series will be something I found on Pinterest.

With that being said, I'll start with last nights dinner.
I've seen this recipe pop up on Pinterest a lot!  Lots of people are pinning it.
I've had it in my food board for the longest, but never got around to making it...
Until last night.

Hawaiian Baked Ham and Swiss Sandwiches

What attracted the recipe to me was the use of Hawaiian Sweet Rolls..
Who doesn't like those?  My kids even love them!
What worried me about this recipe was the Swiss Cheese.  My kids do not like Swiss.
But it looked like an easy, quick meal, and that's what I needed last night.
Pinterest to the rescue...

Here is what you need:

Ingredients
1 12 pack of King's Hawaiian Original Rolls
1 lb. deli ham, shaved
1 lb. Swiss cheese, thinly sliced
1 1/2 sticks butter
3 tablespoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
3 teaspoons of poppy seeds
1 onion, chopped

Directions

1. Heat oven to 350. Melt butter and mix in mustard, Worcestershire sauce, onion and poppy seed. Simmer for several minutes.

2. Cut the entire pack of rolls in half, horizontally (keeping all top and bottom halves in tact).

3. In a greased 9x13 pan, place bottom half of rolls and spread 1/3 of the onion mixture over the bottom of the rolls followed by the ham and cheese.

4. Replace the tops of the rolls and spread the remaining onion mixture over top.

5. Cover and bake for 15-20 minutes and, once finished, separate for serving.

Verdict: The husband and I loved these.
The kids, of course, complained about the Swiss Cheese.
Next time the kids aren't around for dinner, I won't hesitate to make this again for Brent and I.

Grilled Cheese

Did you know that April is Grilled Cheese month? Well, neither did I. But I just found out and I thought I'd share the excitement with you! I grew up on grilled cheese sandwiches, typically just your buttered bread grilled on the stove with a slap of cheese in the middle. And as I grew older, I eventually added a tomato slice in between the bread as well! It was a simple sandwich and I loved it!

Check out this gallery of recipes for the grilled cheese sandwich! They are much more now than a slap of cheese in between grilled bread!
